{Recipe} Love:: Berries, Fromage and Ganache

I came across this recipe from a blog post by Paris Perfect. You can see the original post here. They wrote the post to celebrate the last days of summer in Paris. The dessert seems easy to make, with a prep time of only 15 minutes.

::Summer Berries layered with Fromage Blanc and a Coffee Ganache::

Ingredients - Serves 5

  • 4 graham crackers or 8 ginger-flavored biscuits
  • 300 grams of strawberries (about 2 cups)
  • 2 tablespoons of real raspberry sauce
  • 200 grams fromage blanc (about 7 ounces)
  • 1 egg white
  • 1 bar of dark chocolate
  • 1 tsp of instant coffee
Note: If you can't find real raspberry sauce, you can crush some raspberries and add a little sugar and heat it up. Add some corn starch and let cool. Also, if you have no instant coffee, a few drops of coffee flavoring will do. If no fromage blanc is available, you can substitute sour cream or cream sheese.

Instructions

  1. Put the graham crackers or ginger biscuits into a plastic bag. With a rolling pin, roll over the biscuits and sprinkle on the bottoms of 5 wine glasses.
  2. Pour raspberry sauce over.
  3. Cut up the strawberries and place on top.
  4. Heat the cream and add the diced chocolate and coffee. Stir and let rest for about 5 minutes.
  5. Beat the egg white until it forms soft peaks, like you would when you want to prepare a meringue, and add the fromage blanc.
  6. Pour the fromage blanc mixture over the strawberries.
  7. Put in the refrigerator for 30 minutes.
  8. As a finishing touch, pour the coffee ganache over the white fromage blanc and let rest in the refrigerator for another 30 minutes.

Doesn't it look amazing?

P.S. It might help to look up a recipe on how to make coffee ganache, if you don't know how to.
