A Little Bit of This, A Little Bit of That

For this week's A Little Bit of This, A Little Bit of That, I'd like to focus on the recipe that I mentioned that I would share with you from last week. We used a crock-pot to cook this recipe, which is from the Rival Crock-Pot recipe book. It's very easy to do a, just add everything all together and set it to cook overnight or through the day and it's ready by the following day or evening. We didn't deviate much from the recipe, except using chicken breasts instead of chicken pieces and adding some dash of Pepper Plant sauce to the mix.

Thai Chicken

- 2 1/2 lbs chicken pieces (used chicken breasts for this first time)
- 1 cup hot salsa 
- 1/4 cup peanut butter
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 teaspoon minced fresh ginger
- 1/2 cup peanuts, chopped
- 2 tablespoons chopped fresh cilantro

1. Place chicken in the Crock-pot.
2. Combine salsa, peanut butter, lime juice, soy sauce and ginger. Pour over chicken once mixture is mixed.
3. Cover and cook for about 8-9 hours on LOW or 3-4 hours on HIGH. 
4. Serve over hot rice. Sprinkle peanuts and cilantro on top.
