This caught my eye as I was perusing my blog roll tonight... 

Pumpkin Waffle Recipe!

It looks so good. With fall being here, I am willing to try eat to make these back home. I can probably coerce some people to try to bake these for me... It screams comfort food to me... The nice thing, you can also make these gluten-free, by substituting the regular flour with gluten-free flour.

Here is the recipe taken from Shanna from Pineapple and Coconut, with a few minor changes.

Ingredients:
2 1/2 cups all purpose flour
1/3 cup light brown sgar
2 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp pumpkin pie spice
3 large eggs, separated
2 cups lowfat buttermilk, room temperature
1 tbsp vanilla extract
1 cup pumpkin puree, no pie filling
6 tbsp butter, melted

This should serve about 12-14 Belgian Waffles. Prep time should be around 10 mins and cook time is between 5-6 mins, depending on what waffle maker is used.

Directions:
1. Preheat waffle maker, and spray with cooking spray
2. Sift flour, sugar, baking powder, baking soda, salt and spices into a large mixing bowl and set aside
3. In another bowl, whisk the egg yolks, buttermilk, vanilla, pumpkin and melted butter until it is well mixed
4. Pour the egg yolk mixture into the dry ingredients and stir until evenly combined
5. Beat the egg whites until soft peaks form and gently fold them into the batter. Let sit for 5 minutes
6. Pour a heaping 1/ cup of the pumpkin batter into the waffle iron
7. Cook waffles according to manufacturer's directions or until there is a little bit of steam coming from the waffle iron.

Sounds easy enough, right?
